Metabisulite treatment
The metabisulite treatment is done by immersing the shrimps in a bath of cold water (between 5 and 10º) after leaving the pool.

With this treatment the animal dies with hardly any stress and consequently has much less enzymes which are prone to oxidizing and turning black (melanosis).

Transfer to plant
Shrimps are placed in compartments with lots of ice (1 kg of ice x 1 kg of shrimps) then transferred to the processing plant where they are classified by size and then packed in boxes ready to be frozen.
